Monday 3/10/08: In practical today I made the veal orloff dish. I was able to get some extra to bring home and Corey and I had a big dinner of veal, baguette, salad, and mashed potatoes.
Tuesday 3/11/08: I had the day off today and Corey and I spent part of it at the park and the rest of the day I studied for my practical exam.
Wednesday 3/12/08: Today was the last practical class of the semester. We made bouillabaisse with saffron and fennel. The hardest part of the dish was cutting the julienne of vegetables. After class I came home and finished up my reviewing before the exam.
Thursday 3/13/08: Exam day! We had our last demo in the afternoon and after the chef served champagne. I only took a sip because I didn’t want to take any chances during the exam. For the exam we were given either trout stuffed with mushrooms, or lamb with a peppermint jus. I was really hoping for the lamb and I got it! Everything was going fine except that when I took my lamb out of the oven I set it on the rack above the stove like I usually do. Unfortunately, I must have put it in a place that was hotter than usual because when I cut into it, it was a bit overdone, not bad but not as pink as it should have been. I was kicking myself because everything else went so well. I met Morgan in the locker room and we decided to go out for drinks with Bruno and Corey and we ended up meeting two of our classmates Davide and Steve there. We all rehashed our exam and then decided to let it go and have fun.
Friday 3/14/08: Student Party day! We had our end of the term party today at a British pub. The drinks were the right price…free, and they had lots of yummy appetizers like mini cheeseburgers! We all had a great time and it just flew right by!
Saturday 3/15/08: After a request from Corey to see more of the city, we decided to take a walk and see the Rodin museum. The best part about the museum is its garden which is only 1 euro to get into and houses the Thinker and the Gates of Hell. After the museum, we walked across the river and down the Champs-Élysées to the Arc de Triomphe. We were pretty tired by the time we got to the arc but we figured we might as well go up it. Well, little did we know that it’s 284 steps up a winding narrow spiral staircase to get to the top, scary! We made it and the view was beautiful.
Sunday 3/16/08: Today we visited the Bastille, or rather where the Bastille used to be and on Jon and Lynn’s recommendation bought some delicious churros! Then we walked to the Carnavalet museum which houses paintings and models that illustrate the history of France. Afterward, we headed to the Marais to get our Sunday falafels!

Dear Liz,
I know that I must have difficulty hearing you over the phone at times, because I had no idea that you made Bouillabaisse! This is one of my favorite dishes. I can’t wait until you return…just think of all the terrific dishes you will prepare. (We’ll let you recover from jet lag first).
I’ve also always wanted to try Veal Orloff.
You’ll have to start a to do list.
